The Inspiration Behind the Wholesome Breakfast Muffins
We all know how important a healthy breakfast is. We’ve read it on the back of the cereal box, we’ve seen the stats on improved math scores, and between mom, nutritionist and doctor, we’ve heard the lecture dozens of times. But for most of us mornings are hectic so first thing to go is… you guessed it! Breakfast. Skipping breakfast might get us to work on time, but it shows up to haunt us in all sorts of ways throughout the day- headaches, focus inability, queasiness… stuff that makes us GRUMPY.
So we think you’re gonna like this.
It’s a wholesome breakfast muffin recipe. It’s got nutritional value, it goes well with coffee, it can be prepared in advance and it’s perfect for on the go! We recommend stocking your freezer with these every so often so you can simply grab some on your way out the door and munch en route or at your desk.
Wholesome breakfast muffins… Just what we all need; a healthy start for a productive day. Our personal breakfast fave is one of these winners (okay, maybe sometimes it’s two or three or four…) with a cup of banana foster cold brew coffee. YUM!
WHOLESOME BREAKFAST MUFFINS
You will need:
2 muffin tins
12 paper baking cups
3 large bananas, mashed
¼ cup unsweetened applesauce
2 eggs
1 C sugar
1 tbsp vanilla
2 C whole wheat flour
tsp baking soda
1 tsp baking powder
½ cup orange juice
1/3 cup chocolate chips
Instructions:
Preheat oven to 350°
Blend all ingredients except chocolate chips.
Stir in chocolate chips.
Pour batter into lined muffin tins and bake at 350° for 18 minutes.
Yields: 12 muffins
